
Cranberry Grapefruit Relish on Rice and Pork

Today’s culinary creation was amazing! What do you do with frozen cranberries, onions, pork, and grapefruit? One of my steps in this pantry challenge is to ask Mr. Google Pants to come up with an idea. Try it! I asked what to do with frozen cranberries, grapefruit and canned pork. He came up with this combo.
Coarsely chop 1 cup of cranberries. I chopped mine in the Vita-Mix but you could use a food processor or a knife and cutting board. Place in a medium size bowl.
Zest one grapefruit on top of cranberries.

You will then peel and segment your grapefruit.


Add grapefruit to cranberries along with 1/4 cup minced onions, 2 tablespoons maple syrup and 1/2 tsp salt. Stir and let sit for at least 30 minutes.

While those flavors are blending you will make some rice and heat up your pork. I like to buy whole pork loins when they are on sale and can in pint jars for a quick meal. I opened a pint of the pork and drained the broth into a pan. I then rinsed the pot to remove the fat. I shredded the pork with a fork and added to the broth to heat on stove while rice cooked.
Thirty minutes, start to finish and I had a delicious gourmet meal on the table. We were both pleasantly surprised with the flavor.
